Preparation

1. Wrap the Manchego Cheese with the Turkey Ham.
2. Then wrap the Turkey Ham and Manchego Cheese with the Tortilla Corn.
3. Heat the quesadilla a heavy skillet over medium-high heat.
4. Serve.
5. In the quesadilla put La Perrona Hot Sauce Chiltepin.

French Toast

Ingredients

3 Eggs
4 Bread thicher cut slices
4 tbsp Evaporated Milk Carnation
2 tbsp Cream
2 tsp Maple syrup
1 tsp Honey
1 tsp Vanilla extract
1/2 tsp Cinnamon ground
1/2 tsp Nutmeg ground
Butter
Maple syrup
Strawberry

Preparation

1. Beat together the ingredientes: eggs, Carnation, cream, maple syrup, honey, vanilla, cinnamon and nutmeg.
2. Heat a lightly butter on a pan over medium-high heat.
3. Deep the slice of bread in the egg mixture, turning to coat both sides evenly.
4. Fry the the slice of bread placing in a pan, and cook on both sides until golden.
5. Serve the french toast with strawberrys, butter and maple syrup.

Boneless Chicken Breasts & Veggie & Wok

Ingredients

3/4 pound Boneless Chicken Breasts
5 oz Sliced Water Chestnuts
9 oz Heart of Palm
1 Zucchini
4 tbsp Weber Mediterranean Herb Seasoning
Olive Oil Extra Virgin

Preparation

1. Slice boneless chicken breasts.
2. Cut veggies into large pieces.
3. Marinate the chicken & veggies with Weber Mediterranean Herb Seasoning.
4. Put olive oil in the wok and stir fry; the wok needs to be on high heat and things need to be done very quick.
4. Chicken 5 minutes.
6. Veggie 3 minutes.
7. Mix everything well and serve in plates.

Tuna, Rice Paper and Sauce

Ingredients

2 Tuna
2 tbsp Yogurt
1 tbsp Cream
1 tsp Hoisin Sauce
1 tsp Huy Fong Chili Garlic Sauce
6 Banh Trang Rice Papers
Cilantro
Olive Oil Extra Virgin

Preparation

1. Combine Yogurt, Cream, Hoisin Sauce, Huy Fong Chili Garlic Sauce in small bowl, with a whisk.
2. Slice 2 tuna.
3. Tuna and sauce.
4. Tuna and Cilantro.
5. Prepare each rice paper wrapper by dipping in warm water to soften.
6. Lay flat and place tuna along the centre.
7. Fold ends of rice paper over and roll to secure.
8. Repeat with remaining rice paper and ingredients.
9. Put Olive Oil Extra Virgin on your pan.
10. Make sure your pan is very hot and add the tuna rice paper.
11. The tuna rice paper get seared to golden brown and wait until they’re cooked.
12. Serve the rice paper tuna with side dish.

Sweet Potato

Ingredients

1 Sweet Potato
6 tbs Weber N’Orleans Cojun
Oil Olive Extra Virgin

Preparation

1. In baking dish & heavy duty aluminum foil.
2. Cutting a sweet potato.
3. Baking dish even press them down lightly.
4. Sprinkle a Weber N’Orleans Cojun over in sweet potato.
5. Drizzle with olive oil.
6. Preheat oven to 375°F (190°C).
7. Bake for 45 minutes.

We spent the morning outside today as we normally do. Every morning starts with me sweeping the front of the house to remove the accumulated dirt and leaves, and Normita waters all the plants and trees around the house.

When we moved here about 3 years ago the place had not been maintained in ages and the trees were not producing any fruits. We planted a lot of flowers in large pots in front of the house and created a flower garden the first year we lived here, but it took some time for the trees to start producing as the area is very dry and the trees were planted here with no regard to if they can thrive or not. Last year we had a great crop and we were mostly self-sufficient in fruits from June to December. This year the trees are loaded and we are already eating fresh fruits and we should be good until the end of the year if things goes well. It is a lot of hard work as the area is mostly desert and we only have water from the street for a few hours each morning. We need to do all the garden work early when there is still water. We have big water tanks for the house, but we do not want to use that for garden work. Whenever we have our own place I want to plant a big vegetable and herb garden for the kitchen, lots of fruit trees, and also some vines so that I can start making my own wines again with my own grapes… one day…

While we were working around the house I collected a bunch of citrus fruits and some of the first peaches of the season. Here they are in the sink waiting to be washed:

We had the peaches for breakfast with the last of the grapefruits we have bought last week, but they were still a bit acid so we will wait a few more days or weeks for them to mature. The trees are loaded with them and it will be a great crop this year. The boyz will be happy as they normally eat everything that falls off the trees. I saw Bacchus looking up at the peach tree near the kitchen door this morning as it he was trying to hypnotize the tree to drop a few peaches for him. I think it worked as later I heard him munching on some stones from the peaches. The peaches only last a quick bite with him as he just crushes everything including the stone in one fell swoop.

With the citrus that includes some mandarins, some sour oranges, some limes, and some “limas” (a round sweet yellow citrus from Yucatan that seems to be a cross between a lime and some sweet citrus). With them we will shortly make a nice tropical fruit punch to relax after a long day of work. I will let you know later how it turns up.

We have a lot of fruit trees around the house including 4-5 peach trees, 4-5 pear trees, a few orange trees, a few lime trees, a ‘lima” tree which is a citrus tree that gives small yellow orange-like fruits that are lightly sweet, a pomegranate tree, a mandarin tree, a few prune trees, a few “capulines” tree that gives small tart berries, and a bush that produce some type of raspberry. Normally from late April to December we do not need to buy any fruits as the trees are producing a huge crop.

The first crop of the year are the peaches. Our trees produce a few varieties of very small peaches (~1-2 inches in diameter) with just a bit of fuzz and with a very hard flesh. When we moved here we thought they were not edible as they were very hard, but we rapidly found out that their hard flesh is very sweet and juicy.

This morning while we were passing the broom outside the house on the front patio and doing other chores like watering the trees, I found in the peach tree next to the kitchen door a small peach that looked ripe as it was larger than the other and bright red in color. I jumped up to take it and we tried it. Though it would have improved with another week or two on the branch, it was nice and sweet with just a bit of tartness. It looks promising for this season as all the trees are full with new fruits and in the coming weeks we will start our harvest.

I know someone who will be very happy about this as Bacchus, my Bouvier, loves to eat all the fallen fruits he can find and the peaches, stones and all, are his favorite. There is even a very small peach tree in the back that he can harvest himself and he takes good care of it and “waters” it daily…
